Mini Pizza's

The other night we were looking for something to eat late and really didn't have a lot in the house. We decided to make mini pizzas with Rhodes rolls, spaghetti sauce, pepperoni, and mozzarella cheese. The rolls were frozen so we popped them in the microwave until they were thawed (don't over cook them or the dough will be too rubbery), spread them out on a cookie sheet and topped them with our toppings. We baked them on 425 degrees for about 10 minutes until golden brown and bubbly. We were surprised at how good they turned out. I'm sure it wasn't the most nutritious meal, but it was quick and easy and I'm sure kids would have fun making their own. If you like a little thicker crust just double up the rolls. I liked the thinner crust, Clark liked the thick one. Anyway, if you have all of these random things hanging around your house, give it a try.

We used to make those all the time growing up except we used biscuits. We called them "little pizzas" when we would make them.
